Pink Praline Brioche
The word “praline” isn’t the Cajun candy that I grew up eating in East Texas, it actually is the French word for “caramelized nuts”. Which makes sense of course, because the southern Louisiana sweet is made with exactly that.
Pralines Roses, or Pink Pralines, are a specialty from Lyon, the capital of French Gastronomy. When you travel there, you will find many things flavored with pink pralines, pink praline tarts, pink praline ice cream, etc, but what they are really famous for are the decadent Pink Praline Brioches.
I’ve shared the recipe and techniques here for making the pralines, but you can also use this recipe to make delicious candied nuts, which along with pink pralines, make great gifts!
