French dining experience

In this class, you and your guests will prepare a beautiful and delicious 4 course meal – starter, main course, cheese and dessert.

Choose from the following:

Starters:

  • Soufflé (pancetta & gruyere, chèvre & walnuts, spinach & salmon, zucchini & parmesan, carrot & cumin)

  • Mussels, sauce marinière (shallots, parsley, garlic & cream)

  • Braised asperagus, sauce hollandaise

  • Soup (French onion, roasted pumpkin, zucchini & avocado, mushroom)

  • Mushroom Parfait, Hazelnut Crumble

  • Zucchini & feta cannelloni

  • Shrimp & lobster bisque

  • Pumpkin Gnocchi, crème of lardons, prosciutto and hazelnuts

 

Main courses:

  • Duck à l’orange (orange caramel sauce)

  • Filet mignon, red wine and shallot reduction

  • Scallops with lime hollandaise sauce

  • Salmon with béarnaise sauce

  • Pork tenderloin with fig and rosemary caramel sauce

  • Rabbit, Dijon sauce

  • Beef Bourguignon

  • Seafood risotto

 

Desserts:

  • Soufflé (Chocolate, Pistachio, Raspberry, Grand Marnier)

  • White or dark chocolate mousse

  • Profiteroles

  • Crêpe Buffet (fresh fruit, dark chocolate ganache sauce, salted butter caramel, vanilla bean ice cream)

  • Lemon Posset Crème Brûlée

  • French Toast with mulled red wine poached pears, crème frâiche à la vanille

Price for this 4 hour class: $100/person*. If less than 10 participants, 1000$.

*In certain circumstances, love offerings accepted (churches, non-profit organizations).

Host will need to provide the following:

- counter space for each participant

- oven

- beverages

- dinnerware

- ingredients (detailed shopping list will be provided)

Chef Justin will be equipped with portable stovetops, pots and pans, knives, cutting boards, dough scrapers, rolling pins, tart molds and rings and baking trays.
