Quiche & Tart Class

We’ll have both a delicious bacon and cheese filled quiche Lorraine, the quiche most commonly found in France, and a smoked salmon and spinach quiche, accompanied by a green salad and a French vinaigrette. For dessert, an elegant tarte amandine à la poire, tarte au chocolat et framboises or galette de pomme.

Techniques and recipes you will learn:

- How to prepare a buttery and crumbly pâte sablée, which is the classic French tart crust that we will use for both recipes. Each person makes their own dough, by hand, and will prepare their own individual quiche and tart.

- Crème prise salée, the creamy quiche filling.

- Crème d’amandes, the versatile almond cream used in many pastry applications, or chocolate ganache, for the chocolate raspberry tarts.

- How to make the classic mustard-based French vinaigrette.

Price for this 3 hour class: $75/person*. If less than 10 participants in the class, $750.

*In certain circumstances, love offerings accepted (churches, non-profit organizations).

Host will need to provide the following:

- counter space for each participant to make their dough

- oven

- beverages

- dinnerware

- ingredients (detailed shopping list will be provided)

Chef Justin will be equipped with induction stovetops, pots and pans, knives, cutting boards, dough scrapers, rolling pins, tart molds and rings and baking trays.
